Project Description
The study compares college students’ fruit and vegetable intake from self-reported food frequency questionnaires with Veggie Meter® measurements of skin carotenoids. College students will complete an online survey that includes questions on demographics, fruit and vegetable intake, health behaviors, social support, and general, digestive, and mental health. At the end of the survey, participants will be offered an opportunity to have their carotenoid levels measured by a Veggie Meter®. Interested individuals will be contacted to schedule the assessment. Data will be collected year-round to capture seasonal trends in skin carotenoids.

Team Needs
The study will be conducted from Fall 2025 to Summer 2026. We welcome students of all majors who are interested in nutrition research. Team members will (a) complete all required research protocol and training, (b) promote the study to eligible college students and assist with on-campus recruitment (c) coordinate and conduct Veggie Meter® assessments, and (d) attend scheduled meetings with the research team.
